Further fermentation is carried out in autoclave, with the use of selected yeasts and sugar for 60 days.
Straw yellow color, with soft greenish reflections. Fruity aromas of apple, with an exotic component like passion fruit, accompanied by floral hints of acacia and hawthorn. Intense flavor, good persistence, pleasant freshness and softness.
Excellent between meals, with fish marinades and dessert.
This amiable sparkling wine comes from our historical Glera vineyard “Asolo 14 Settembre 2009”. It is located on the top of Asolo Hills,that has a clay soil. The plants are 3300 per ha, the grapes are cultivated with the Cappuccina system and then they are selected and collected in cases during the manual harvest. The winemaking starts with a soft pressing and after a decantation at low temperature, selected yeasts have to be added. The fermentation lasts 15 days then the wine is kept in stainless steel tanks at 5°C until the sparkling process.
