Further fermentation is carried out in autoclave, with the use of selected yeasts and sugar for 60 days.
Straw yellow color with greenish reflection. Characteristic fruity aromas of apple, apricot and pear. Fresh, savory and balanced flavor.
Excellent as an aperitif, with fish appetizers or savory dishes and white meat.
This sparkling wine comes from our Glera vineyards that have a clay soil and that are located in the high Asolo Hills (Farra Vineyard). The plants are 3300 per ha; the grapes are cultivated with the Cappuccina system and collected in cases during the manual harvest. The winemaking starts with a soft pressing and after a decantation at low temperature, selected yeasts have to be added. The fermentation lasts 15 days then the wine is kept in stainless steel tanks at 5°C until the sparkling process.
