This sparkling wine, which is very dry, comes from our old Glera vineyards located in the high Asolo Hills (Sant’Anna Vineyard). The grapes are cultivated following the organic rules and with the Cappuccina system, and the soil is clayey and calcareous. The plants are 3000 per ha with a production of 1107 q/ha. The winemaking starts after an accurate selection of the grapes during the manual harvest. It is followed by soft pressing and after a decantation at low temperature, selected yeasts have to be added. The fermentation lasts 15 days then the wine is kept in stainless steel tanks at 5°C until the sparkling process.
