Our sweet sparkling wine comes from a blend of three white grapes, from vineyards situated on the hill. There are 3000 plants per ha, the soil is clay and the grapes are cultivated with the Capuccina-Sylvoz system. The ripe grapes are selected during the manual harvest and then they are softly pressed. Selected yeasts are added to the wine and then it is kept with the residual sugar in stainless steel tanks until the sparkling process.
