This sparkling wine comes from our best vineyards of Glera grapes, located on the Asolo Hills (Sant’ Anna Vineyard). The soil of these vineyards is called “caranto” due to its hardness and for this reason the wine is very dry. There are 3000 plants per ha, the grapes are cultivated with the Cappuccina system, selected and collected in cases during the manual harvest. The winemaking starts with a soft pressing and after a decantation at low temperature, selected yeasts have to be added.
The fermentation lasts 15 days then the wine is kept in stainless steel tanks at 5°C until the sparkling process.
