Typical cuisine from Asolo: Guinea-fowl in pepper sauce. Excellent with grilled red meat and game.
Our Rosso Asolo DOC comes from a blend of red grapes of our vineyards (Virginia’s, Rose’s and cellar’s vineyards). There are 4500 plants per ha, the soil is clay and the grapes are cultivated with the Guyot system. The grapes are collected in cases during the manual harvest, they macerate on their skins for 17 days and then the wine is kept in stainless steel for the first 4 months and then transferred to oak barrels for 18-24 months.
